Dani’s Mom’s Chicken Soup Recipe

Ingredients

  • Chicken pieces 15-20 Thighs, drumsticks or both with skin is OK
  • 1 Large or two small onions halvedÌýor chopped onion
  • 6 cloves garlic
  • 6 seeds whole seeds cardamom
  • 6 cloves
  • â…“ of a bunch - Fresh leaves (not dried) no stems cilantro
  • 1 tablespoon salt
  • 1.5 teaspoon turmeric
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 tablespoon corriander
  • 1 can approx. 170 gram (6oz.) tomato paste

Directions

  • Place the chicken pieces in a large pot and add water to cover the chicken.
  • Set to medium-high heat and let simmer until white foam starts to rise.
  • Skim off any foam that rises. Repeat the process every few minutes until the foam is minimal (it will usually take about 5 rounds of skimming).
  • Add the onion, garlic, cloves, cardamom seeds, cilantro and salt.Ìý
  • Stir and let simmer for 10-15 minutes.
  • Add the turmeric, black pepper, cumin, coriander and tomato paste and stir well.Ìý
  • Leave on high heat for 5 minutes, then reduce to medium heat and let cook for 20 more minutes.
